Breakfast ideas: creamy breakfast bowl

Egg white is a versatile ingredient which is used in different food preparations. It is rich in protein, high biological value (BV), and it contains almost no fat. We have combined it with natural white yogurt and a coconut drink. Rice flour and agar-agar have been used to control flavor release and give the final product a nicer texture.

Ingredients and how to make it:

BOTTOM LAYER

  • coconut drink, 110g
  • egg white, 100g
  • natural white yogurt, 75g
  • rice flour, 15g
  • agar-agar, 3g

In a medium saucepan, stir together coconut drink, egg white, rice flour and agar-agar. Place over low heat and cook, stirring constantly. As soon as the mixture starts to bubble, remove the saucepan from the heat and add the natural white yogurt whisking constantly for 1 minute. Pour the base into a bowl and let it thicken in the fridge over night.

SAUCE and DECORATION

  • natural white yogurt, 15g
  • honey, 10g
  • cocoa powder, 10g
  • blueberries
  • coconut flakes

Combine cocoa powder and honey, stir well until smooth. Add the natural white yogurt until the desired consistency is reached. Pour it over the base, add coconut flakes and blueberries on top just before serving.
